Easy to prepare Mexican baked fish. Fresh fish and salsa available year round at our meat counter. Butchers are on staff to filet the fish for you.

1 1/2 lbs of cod or tilapia (fresh) If using frozen fish, thaw and squeeze out excess water
1 cup fresh cheese
1/2 cup shredded sharp cheddar cheese
1/2 cup corn
1 cup sliced red bell pepper
1 cup salsa
1 avocado, sliced
Preheat oven to 400. Using olive oil, lightly grease an 8x10 baking dish Rinse fish filets and pat dry with paper towels. Lay fish in dish. Pour salsa over the fish, sprinkle onions, corn, bell pepper and jalapeno on top. Sprinkle evenly with cheese. Bake uncovered for 15 minutes. Fish should be white and flake easily with a fork. Serve topped with avocado and sour cream.
